History
Project:
The
Accelerated HACCP Project for Retail Butchers in England
Clients:
The
Department of Health and The Meat & Livestock Commission
Dr
Baines managed a major 2-year project to train 7000 retail
butchers in HACCP and implement and audit HACCP in their shops
prior to the enforcement of butcher shop licensing in November
2000.
The
£3.6 Million project was administered by a small team at the Meat
& Livestock Commission and represented a World First in terms
of scale and the application of HACCP in the retail sector.
The
project involved the training and management of 168 trainers and
consultants spread throughout England and liaison with LACORS and
Local Authority Environmental Health Departments throughout the
Country.

The
project materials were approved to the Codex World HACCP
Standard.

The
Training Course won the 1999 Food Hygiene Award for the most
significant contribution to food safety.

The
project was completed in April 2000, on time, on target and
within budget.
